VINEGAR BRAISED PORK

INGREDIENTS
Country style pork ribs (With or
without bone)
1 jalapeno- seeds removed and
minced
3 carrots- shredded
1 stalk celery thinly
sliced
1 onion sliced thin
5 cloves garlic
sliced thin
1 cup vinegar
1 cup water
1/2 cup
soy sauce
2 tbsp brown sugar

Preheat your oven to 375. Generously salt and pepper your pork. I like to leave
my meat out for about 20 minutes to take the chill off of the meat. This will
lend in a nicer sear. In a dutch oven or cast iron skillet,heat up 1 tbsp oil.
Brown the pork on all sides in your cast iron skillet. Add the onions,
shreaded carrots, jalapeno and celery to the pan, cooking till soft. Garlic can
burn faster then the other veggies, so I like to throw it in after the others
have been cooking. Add the sugar, soy, vinegar and water and transfer into the
preheated oven. Cook for about an hour, or untill pork is so fork tender.
