INGREDIENTS
CARROT SALAD
bunch of rainbow carrots, cut thin on a
mandolin
1/2 cup chopped cilantro
2 green
onions
DRESSING
2 tbsp vinegar
2 tbsp olive oil
1/2 tsp sesame oil
1/2 tsp salt
1/2 tsp Sugar
1/2 tsp corriander seed (crushed)
1/2 tsp dill seed (crushed) <Fennel seed works well too>
1/2 clove garlic minced

DIRECTIONS
Combine the dressing ingredients in a jar and shake. Put in the
refrigerator for at least an hour for the flavors to meld together. Using a
mandolin, slice the rainbow colored carrots very thin. Chop the cilantro and
the scallions and combine with the carrots. 15 minutes before serving, combine
the dressing with the carrot mixture.
