5 MINUTE TOMATO SAUCE

Enjoy this sauce in the heat of the summer. Normally I cook my sauce for 3 hours, letting the garlic and herbs waft through the house, but there are those days when you would love a great sauce but don't want to spend hours simmering sauce. I make this sauce in the summer to put on our pizza. Its a great recipe because it is just sooooo simple.
INGREDIENTS
1/4 Cup EVOO
1/2 tsp crushed red pepper flakes
1/2 tsp kosher salt
4 cloves garlic, finely chopped
1 28 oz can whole Italian tomatoes- (crushed with your hands or food processer)
zest of 1 lemon

DIRECTIONS
Combine the olive oil, red pepper flakes, sea salt, and garlic in a cold
saucepan. Stir while you heat the saucepan over medium-high heat, sauté just 45
seconds or so until everything is fragrant - you don't want the garlic to brown.
Stir in the tomatoes and heat to a gentle simmer, this takes just a couple
minutes.
