BACON AND PEA QUICHE

I love making quiches with a salad when I have friends come over in the afternoon. It is very versatile, you can add whatever you have on hand. Frozen peas are great because I always have them in my freezer. There is something about the sweetness of the peas that go nicer with bacon, compared to the traditional spinach and bacon combo. You could always use a bought crust to make this faster, but I usually make my own crust. The more often you make crust, you realize how fast and cheap it is. you could even whip up a couple batches of crust and freeze it. Check out my crust recipe in my desert section
Ingredients
4 eggs
1 1/2 cups heavy cream
6 pieces cooked bacon
1/4 cup frozen peas
4 shallots
1/4 cup cheddar cheese
salt/pepper

Directions
Pre-heat oven to 350. Beat the eggs and heavy cream together. Add salt pepper, cheese, shallots, peas and bacon. Pour into a prepared pie crust. Bake until set and golden. This should be about 60 minutes.
