KHOLRABI GREENS
I sure do love my greens. I make some kind of greens almost nightly. I was not raised eating them, so when I first tried collard greens, I was hooked. The truth is, I started venturing into the world of greens after hearing some rap song years ago that talked about southern food, including greens. That song inspired me to cook like a southern woman. There is something about the pork fat and greens that fulfills my every vegetable need. I like to add some kind of pork product to most greens that I prepare. In this recipe I use bacon fat. I save all of my bacon fat from my weekend breakfasts and keep it in the fridge. It adds a depth of flavor to many foods that oil can not. If you are watching your waste, by all means jsut some olive oil instead!
