ASPARAGUS AND SPINACH TRIANGLES
Some friends that I used to work with do not eat a lot of meat. This can be tricky at times because I usually have some sort of meat in every meal that I make. When they come over, It forces me to be creative in coming up with a meal that both the vegetarians and my meat eating husband will enjoy! I served these triangles with a garden salad and sauteed asparagus and zuccini.
INGREDIENTS
1 lb bag of frozen whole leaf Spinach
1/2 bunch of asparagus
1 onion
5 cloves garlic
salt/pepper
pinch of red pepper flakes
1/2 cup green onion cream cheese (I used my homemade cream cheese- but you can use any store bought oniony cream cheese)
1 large package of goat cheese
3 tabsp chopped sun dried tomatos
1/2 bunch of asparagus
1 onion
5 cloves garlic
salt/pepper

Cook the onions till they are transparent, add the spinach.
