KYUNAS FRIED CHICKEN

My fascination with southern food..... I fried chicken so many times before actually doing it right. I tried so many different recipes, often leading to a burnt outside and raw inside. Fried chicken night in the Kao house was always a bad one. One day, having some beers with my friend kyuna, I explained my delema. "How could I love fried chicken so much, but have never been able to make it well?" After all, I LOVE cooking, I love experimenting so why have I not been able to concur this? Well-the main thing she explained to me is that fried chicken should be simple- no batters, and marinating it in the fridge for days. Just Seasonings and flour. Her family has been making fried chicken like this for ages. How could this be? I could not understand how this could taste like finger licking fried chicken being it sounded so simple....
The other thing is that you have to cut up your own chicken. If you buy chicken pieces in the store, they are just too big and you will have problems with fully cooking the inside. Chickens were never as big as we have bred them today. So cut up that whole chicken! Also- after one bite of Kyunas fried chicken, I was sold. No more fancy batters for me. Just the old fashioned way of making chicken.
