PULLED PORK

INGREDIENTS
Pork shoulder
2 onions chopped
4 cloves garlic
salt and pepper
1 can chipolte peppers in
adobo sauce
Coca-Cola

Heat a dutch oven with olive oil till very hot. Salt and pepper the pork on all
sides. Massage the seasonings into pork. Place the pork into the hot pan and
brown all sides. Add onions then garlic to the dutch oven with the meat and
start to carmalize the onions. I usually add the garlic to the pan after the
onions have been cooking for a minute. Garlic burns very fast and can leave a
bitter taste that I do not like. After the veggies have cooked for a few
minutes, add the chipolte peppers and mush them to break them up. Add Cola to
cober the pork and place the dutch oven in a 375 degree oven for 3 hours or
untill pork is falling off the bone and soft. Once this happens, take out of
the oven and let it cool for about 20 minutes. remove fat, and shread gthe
pork. If there is a lot of sauce still, Reduce the sauce down a little. Add
the pork back to the sauce and combine. Serve with cole slaw, buns or tortillas
